Taiwan Wanglai Biotech traveled to Japan to master authentic soba-making techniques, then fused them with the traditional craft of Taiwanese Guanmiao noodles. By sun-drying the noodle dough under natural airflow—an artisanal, low-temperature process—our noodles develop a deeper aroma and a delightfully chewy, springy texture. To this day, no machine can replicate the complex flavor and mouthfeel created by true sun-dried noodles.
How we make our traditional Guanmiao noodles (5-step artisanal process):
We combine premium wheat flour and water in precise ratios. Both hydration and mixing time are adjusted based on weather and temperature—key variables that only experienced noodle masters can judge. This is essential for gluten development, elasticity, and a smooth, non-sticky finish.
The dough sheets are pressed and laminated repeatedly. The number of passes directly impacts the noodle’s Q texture (chewy bite), elasticity, and extensibility, ensuring a ramen-quality mouthfeel without frying.
After cutting, the strands are swiftly folded and arranged on bamboo trays so the noodles open naturally into a fan shape. This improves airflow and even sun exposure, and also makes the noodles easier to package and store.
We sun-dry in screened drying rooms using bamboo trays to ensure even heating and proper moisture release while protecting from dust and pests. This controlled, natural dehydration locks in flavor and resilience.
