Orchard selection

We evaluate farming practices, seasonality, ripeness, and sugar–acid balance to secure brewing-grade fruit from origin.

Traditional fermentation

Three natural stages—saccharification, alcoholic fermentation, then acetic fermentation—followed by over 24 months of aging.

Raw vinegar standard

Not from concentrate and no added alcohol, meeting the definition of raw vinegar.
