Taiwan Wanglai Biotech chose Kaohsiung Daliao’s No. 147 fragrant rice, marrying its superb grain with a singular yeast lineage and the craft of master brewers. Along the way, they invoke gold-magnetic water, immersion extraction, precision filtration, deodorization, degreasing—meticulous steps few can truly command. From this devotion is born Yi Qi Zui, a sake of rare finesse.
In trials, its character revealed a living arc: at first a whisper of pear, slowly unfolding into apple, then lychee and white peach, and at last resting in a mellow plum. The evolution astonishes—so unlike the single-note clarity of many Japanese sakes. Who would have thought that Taiwan’s rice, in the hands of artisans, could strike such a luminous chord?
